Hearty Meat Loaf

Another of my creations. It was loved by all and is also very heathy. I hope you try it and it is loved by your family as much as it was love by mine.It was created on March 20, 2006

I have let loose some of my special 'hints' that you will find at the bottom of this hub. I have had fussy eaters and through my experience I have found some different ways to feed a fussy eater and know they are getting the nutition they need to grow strong and healthy.

I hope this will encourage you to get creative with your children. There are ways to get to eat healthy without them knowing it.

Receipe

1 lb. of ground round

2 large eggs

1 tbsp.ketchup, or V8 juice, and dried mustard. 1/4 tsp.garlic powder

1/4 cup chopped red onion, , 1 cup fresh spinach very finely chopped or broken up by hand, and 1/2 cup of fresh parsley finely chopped or broken up by hand.

1/4 tsp salt, pepper, season salt, and chili powder.

1/2 cup of bread crumbs.

Place all ingredients in mixing bowl and mix with clean hands until mixed well.

Grease loaf pan and place mixture in pan and cover with foil.

Bake in oven at 350 for 1 hour and 15 to 20 min. Remove from oven and turn it off. Remove foil from pan.

Drain liquid into an old can or cup with a spoon in it so it won't break. Place meat loaf back in oven for 5 min.

Serve with whipped mashed potatoes and frozen squash, rolls or salad. The choice is yours.

Hints

 If your kids aren't crazy about spinach, the smaller you chop it the better as they won't see it. Make parsley a little bigger. Just tell them, "This is to add "texture" and mom is just creative." The bread crumbs can be increased or decreased depending upon how it appears to you. If you like it thick add more. Same goes for other ingredients. Don't like red onions use another like Vidalia. You can use garlic cloves instead of powdered. It just depends on your personal taste buds and who you are cooking for.

I sugggested frozen squash as it adds a spectacular color to the meal and is very quick to make in a microwave. Color matters to kids. Add a spoon of brown sugar to sweeten, as they like that too. I have always found kids love whipped potatoes. Whipped with a mixer, adding butter and milk. No lumps! At lease you know they are eating a healthy meal and getting in those precious vegetables.

Sounds good - I love the spinach tip...although my kids are 18 now and eat the stuff!!!

Funny you mention the spinach. My sister in law mixes spinach into a lot of her recipes for her kids including meatloaf & meatballs.

Probably the most shocking is when she mixes carrot baby food in with her kid's chef boy R Dee raviolis or beefaronis. (They never know & LOVE the stuff!)
